Tofu Scramble

Ingredients (Organic when possible)

  • 12 oz firm tofu

  • ½ red bell pepper, sliced

  • ½ tomato, chopped, or 8 cherry tomatoes, halved

  • ½ onion, chopped

  • 1 cup chopped spinach (optional)

  • 2 tsp safflower, avocado or olive oil

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp minced garlic or ¼ tsp garlic powder

  • ½ tsp turmeric

  • ¼ tsp cumin

  • 2 tsp lemon juice

 

Directions

Drain the tofu and cut into ½“cubes.

Slice bell pepper and chop onion.

Heat oil in a pan over medium heat. Add the onions, peppers, tomatoes and cook until softened.

Add in the tofu and cook on medium heat until most of the water has evaporated.

Add the lemon juice, salt, pepper, spinach and spices and mix well.

Remove from heat and serve.
