Vegetarian Taquitos

Ingredients

  • 1 tablespoon taco seasoning, (or mix paprika, chili powder, garlic powder, onion powder, cumin, salt and pepper.)

  • 1 can vegetarian black beans or refried beans.

  • 8 small flour or corn tortillas

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1/2 cup corn (optional)

  • 1/4 cup chopped onion (optional)

  • Cream cheese or vegan cream cheese

  • 1 container of Salsa

Topping ideas: Salsa, guacamole, sour cream, cilantro, chopped jalapenos, etc.

 

Instructions

Oven Method:

1.     Mix 1 cup salsa with 1 cup cream cheese or vegan cream cheese for a simple taquito sauce. Set aside.

2.     Preheat the oven to 400 degrees.

3.     Combine the taco seasoning and refried beans. Salt as needed.

4.     If using corn tortillas, you can warm with a little oil in a pan first for a couple minutes to keep them from breaking.

5.     Scoop 2 tablespoons of the seasoned refried beans into each tortilla.

6.     Top with corn and cheese.

7.     Tightly roll and place into a pan with the seam side facing down. It helps if you can keep them packed tightly in the pan.

8.     Brush or spray with olive oil and bake uncovered for 20-25 minutes until they begin to brown on the edges.

Air Fryer Method:

Preheat air fryer to 390 degrees. Place taquitos in the air fryer basket and cook for 5-6 minutes until golden brown.
