Curried Ginger Sweet Potato Soup

Ingredients

  • 4 large sweet potatoes, chopped in to 1” cubes

  • 1 small onion, chopped

  • 1 ½ Cups Vegetable broth

  • ½ can coconut milk (or more to taste)

  • 2 tsp Minced fresh ginger

  • 1 TBSP Curry powder

  • 1 tsp cumin

  • 1 tsp salt

  • 2 tsp butter or ghee

  • 2 TBSP roasted pumpkin seeds, sour cream and/ or chopped cilantro (garnish)

Optional ingredients: add mushrooms, onion, jalapeno, cubed tofu or vegetarian sausage

 

Directions

Add sweet potatoes, onion, spices, salt and vegetable broth to a large pot. Add water to below the top of the sweet potatoes, simmer until soft.  Reserve out ¾ cup of sweet potatoes and set aside. Add coconut milk, and blend with hand blender or regular blender until smooth. Return reserved sweet potatoes and any additions you like, see options above. Check and adjust seasonings and return to simmer. Simmer 10 minutes or until heated through and nicely combined. Garnish with roasted pumpkin seeds and /or cilantro. Dig in!
