Italian Stuffed Spaghetti Squash

Ingredients

  • 1 Spaghetti Squash

  • 1 pint Organic Grape tomatoes, halved

  • 1 block Organic Feta Cheese (6-8oz)

  • 3-4 cloves Garlic, chopped

  • 1-2 TBSP Olive oil

  • Italian seasoning or Braggs 24 Spice blend

  • Salt and Pepper to taste

  • Optional: fresh basil and balsamic glaze to garnish

 

Directions

1. Cut squash lengthwise, remove seeds and place in a baking dish with 1 inch of water

2. Drizzle with half of the olive oil.

3. Stuff squash with ½ block of feta, top with seasonings, garlic cherry tomatoes and the rest of the olive oil.

4. Bake on 375 for 1 hour to hour and 15min, and check at intervals. Bake until flesh is soft. Can cover for the last 20 minutes to seal in juices. Garnish and enjoy!

Variations: Stuff squash with chili and cheddar, or add kale, spinach or other greens and parmesan. You can also cook squash first, face down in water, then pull out flesh and top with ingredients if preferred. Wonderful pasta substitute!
