Mix n Match ingredients for tasty creative salads
Ingredient ideas
Romaine lettuce, spinach, arugula or Salad greens mix
Carrot shredded or sliced
Add fresh vegetables such as tomatoes, shredded beets, green peas, edamame, sprouts, red or yellow bell pepper, celery, avocado, cucumber
Green or black olives, quartered artichoke or palm hearts
Cheddar, feta, goat or other cheese
Thinly sliced apple, strawberries, orange or tangerine, dried cranberries
Toppings: Biena or Saffron Road roasted chickpeas OR sunflower or pumpkin seeds
Fresh herbs such as scallions, basil or mint
Directions
Chop and mix salad ingredients to your liking. Note: Roasted Chickpeas are an
amazing substitute for croutons. Since the dressing makes the salad, find a dressing you love.
Here are healthy homemade options:
Dressing Options
Lemon Salad Dressing:
¼ C Olive oil
2 TBSP lemon juice
2 tsp apple cider vinegar
1 TBSP mustard powder or turmeric
1 small clove garlic
½ tsp oregano
¼ tsp salt
1/8 tsp pepper
Mix all ingredients and serve, makes 2 servings. Can store up to 3 days in the refrigerator.
Creamy Balsamic:
4 tsp Balsamic vinegar
2 TBSP Mayonnaise
Salt & pepper to taste
Dash Garlic powder and/or agave as desired..
Directions
Mix ingredients and use as creamy balsamic dressing. 1-2 servings.
Can store up to a week in the refrigerator.
