CREAMY VEGAN SAUCE

Ingredients (Organic when possible)

  • 1 medium white onion

  • 1 TBSP high heat cooking oil (safflower, sunflower, avocado, etc)

  • 1-2 cups low sodium vegetable broth, divided

  • 3/4 teaspoon sea salt

  • 1/4 teaspoon ground black pepper

  • 3-4 minced garlic cloves

  • 1/2 heaping cup vegan cream cheese

  • 1 tsp lemon juice

  • 1 tablespoon nutritional yeast or white miso

Instructions

1. Sauté onion in oil for a few minutes until translucent. Add garlic and sauté until fragrant on medium heat, stirring occasionally.

2. Add the onion and garlic to a blender with 1 cup vegetable broth, salt & pepper, vegan cream cheese, lemon juice and miso. Or blend with hand blender for a couple minutes until creamy and smooth. Add any more broth to reach desired consistency, if necessary.

3. Cook preferred pasta according to directions. Note: When preparing your pasta, make sure to salt your water so your pasta isn't bland, which can affect the end flavor of the dish.

4. Add pasta to serving dish and add any veggies or proteins you like. I like to add broccoli, spinach or peas. Serve sauce over pasta.

5. Garnish with parsley, lemon zest and salt & pepper, if desired. Enjoy.
