Ken's Purple Cabbage with Veggies
Ingredients
1/2 roughly chopped onion
1/2 colored bell pepper sliced
1/2 green bell pepper sliced
3 stalks of celery, roughly chopped
2 carrots, sliced
1 cup veggie broth
2 tsp dried parsley
2 tsp salt
1/2 lg tomato, sliced
1 small head of purple cabbage
Directions
Sauté veggies in olive oil until crisp tender (minus tomatoes and cabbage) add veggie broth and cabbage and cook with lid over medium high heat approximately 20 minutes, stirring frequently until cabbage is soft. Add tomato the last 5 minutes. Enjoy.
