Breakfast Tacos

Ingredients

  • 2 tsp cooking oil

  • 2 Corn tortillas or Gluten free tortillas

  • 2 slices red pepper, diced

  • 1 lg handful of spinach, chopped

  • 1 slice onion or scallions, chopped

  • 1 veggie sausage, chopped

  • 2 Eggs

  • Salsa (red or green) or chopped tomato

  • Grated cheese or feta cheese or cheese substitute

  • Dash salt & pepper

  • ¼ tsp chili powder, smoked paprika (optional)

  • Variations: Add cooked potatoes, black beans, black olives, avocados, etc)

 

Directions

Dab a small amount of oil on tortillas and heat over medium heat, 1 minute on each side. This keeps them pliable, and they don’t break as easily. Lay tortillas on plate. Sauté veggies in oil for about 3 min. Add sausage and any seasonings and heat through. Scramble eggs in a bowl, pour in pan and scramble with veggie mixture until firm, remove from heat.

Portion egg mixture into tortillas, topping with salsa and cheese. Fold and eat! Enjoy! Makes 2 tacos.
